Admits metered amounts of invert sugar syrup, whole milk, cocoa butter, and chocolate. Starts agitators to mix batch for specified time and pumps mixture into pressure cooker. Observes gauges and thermometer and adjusts steam valves to control pressure cooker. Examines batch to detect lumps, and pumps mixture through homogenizer to ensure uniform consistency. Collects sample for laboratory analysis.
